I tend to come home and just whip things up.
So here’s the menu:
Boiled Shrimp with cocktail sauce
So the shrimp is just boiled until cooked. Serve with cocktail sauce.
Cook the orzo per the package label. To change things up I added mascarpone and saffron to the Orzo and salt to taste. [yes, I have a love affair with orzo.]
The Kale chips I credit to a dear friend, Karyn
Wash kale leaves and arrange on cookie sheets – I use parchment
Season with salt, black pepper, and red pepper
Broil in oven until crisp – and that is the tricky part because they do burn if not watched.
