1 cup of Irish Butter
1/2 cup of packed brown sugar
1/2 cup of natural granulated sugar
1 tsp. vanilla extract
1 1/2 cup all purpose flour
1 tsp. baking soda
1/2 tsp. sea salt
1 tsp. cinnamon [or more :)]
1 1/4 cups Irish 3 minute rolled oats
1 1/4 cups Irish 5 minute steel cut oats
1/2 cup finely chopped pecans
1/2 cup mini chocolate chips.
Preheat oven to 350 degrees Fahrenheit.
Combine flour, salt, and baking soda. Cream butter, sugars, egg, and vanilla.
Add the flour mix to the butter mix until smooth.
Add the oats, followed by the nuts and chocolate chips.
Drop dough on parchment covered cookie sheets.
Bake for 15 – 17 minutes.
Remove from oven an cool before consuming.
